Is there a way to have a shipping option have a max range such that if the total order weight would be over X then that shipping option is not displayed?

Example, you offer shipping option A so long as the order weight is not over 100 lbs. If the shipping weight exceeds 100 lbs., then shipping option A is not displayed to the user.

BTW, do you ever create the quote forms for people? Meaning, what if we came up with all the specs and stuff but got a quote from you to create the form for us? We could then just install it, etc. What would you charge for doing this?

Yes, the Limit Selections line can be used to limit the selections that are presented to the User. You'll need to define ranges for the weights, then it is easy to use the Limit Selections line to define which ranges are valid for a specific shipping option.

How detailed should the info be?

For example, how should the pricing-table info be presented? How about shipping tables?

Might have several shipping tables for regions/methods

The information should be detailed. It needs to be easily understand. If you don't describe the details of how to calculate pricing then the formulas match your business requirements. I don't require a specific format, customer frequently provide a spreadsheet but any clear documentation is acceptable.
